This wonderful product has been used in Caribbean, Latin American, and Asian cuisines for many years. Coconut milk adds a uniquely rich and sometimes creamy texture to a dish which is difficult to duplicate with any other product.
Coconut milk is not to be confused with coconut water, the clear liquid juice found in the center of a coconut. Although the coconut water from a young coconut makes an extremely refreshing beverage, it is not generally used for cooking. Coconut milk is actually made by juicing the white "meat" of a mature coconut. The end product resembles dairy milk.
